My friend uses some cards that say "opponent must sacrifice a create, that player loses health equal to that creatures mana cost" but lets say I sacrifice a snake token created from Sosuke’s Summons, would it be 3? or 0? 1.5?

Also, what would the mana cost be of an orochi hatchery? whatever you tapped to play it?

X costs are always considered to be 0. A lot of cards actually state that (an X on a mana cost means 0). For tokens, things get a little tricky, since they DON’T have mana costs. However, players I know (seasoned ones, I mean) tend to play them as having 0 mana costs, and I think that’s the most reasonable thing to do. Don’t know where to find this rule on the Comprehensive Rulebooks, though.
I don't like YOU.

Creature token mana cost is 0. This is same for land or face down creature.
See comprehensive rule 203.1.

For Orochi Hatchery, X when playing spell with X in mana cost, the X must be declared first by choosing a number and then pay the mana cost. If it goes to other zones than stack, X will always be 0. Like a permanent, in hand, in graveyard or library. You can see rule 409 or the glossary in the Comprehensive rule book.
