1 The Gaffer, Sam's Father
1 Rosie Cotton, Hobbiton Lass
2 Bilbo, Well-spoken Gentlehobbit
1 Horn of the Mark
2 escape
2 narrow escape
2 a talent for not being seen

basically the thought is to heal with allies and use powerful hobbits to win skirmishes, as well as making Frodo hard to kill.  It will probably be used in conjunction with the morc shadow side from here http://lotrtcgwiki.com/forums/index.php/topic,8408.0.html.

I am uncertain if I should squeeze in a fifth companion. If so I am considering either Boromir, son of denethor or alternatively use either quickbeam or fladrif along with ent draught for merry and pippin. However either of these things would require removing cards, but I am struggling to find much to remove.

I am also looking for advice on general improvements to the deck-I know that shire countryside is an option but I really don't want to use it. Any other suggestions would however be greatly appreciated.

I'm playing hobbits with a piece of Dauntless hunter for the xtra choke. Just starting with Pippin, Merry and Legolas. You dont even need to play any elven cards and you can kill him at any time if you dont need him anymore.

I'd say definitely add a boromir, SoD. If nothing else, he is a 6 str pump then fodder.

The second option I have is to focus on merry and pippin, skipping sam and a promise to squeeze in ent draughts and quickbeam. Also swapped out the allies for shire countryside shenanigans for skirmish phase healing to combo with boromir and ent draught

Mono hobbits really don't work that well in movie.  You either need Dauntless Hunter for the choke or Smeagol for the killing power and other tricks.

You should keep it all hobbit (very similar to your original). In fact, with all those hobbit allies as well I'm amazed you don't use Chance Observation (10C106)! Making any of your companions +11 Strength with a single pump? Yes please >:)
