Was thinking about this yesterday when sorting some cards... for me personally, the most aesthetically pleasing card has to be Depart Silently. The image itself if beautiful and it's so quick in the movie, I barely notice it when I watch it. I think the Gandalf culture bordering is what really makes it great. I think if it was Shire culture or something it wouldn't be my favorite.
I'll give a runner up nod to Bilbo, Retired Adventurer.

I always liked Staff Asunder. The contrast of light Vs flame and shadow made for a brilliant picture on a pretty disappointing rare. Denizens Enraged is also up there for similar reasons, but I don't own that card so I'm just going on the computer pic, which just isn't the same.

Yeah I think there's just something about those Ganfalf culture colors that look great, Staff Asunder is a great choice.

Easterling Captain
Gollum, Mad Thing
Gandalf, Returned

That Easterling Captain is so good - very sharp. So many Easterling cards from just a few moment on film, but this one really stands out to me.

Faramir, Son of Denethor 0P16

The One Ring, Answer To All Riddles
The Witch-King, Lord of the Nazgul
Eomer, Third Marshal of Riddermark
Alliance Reforged
Cirdan, The Shipwright
Gollum, Mad Thing
Smeagol, Simple Stoor
Lurtz, Minion of the White Wizard
Gollum, Dark as Darkness

It's not really what you're asking, but my pick would be the countdown collection pair of 0P42 and 0P36, best shown here: https://wiki.lotrtcgpc.net/wiki/The_Countdown_Collection.
More conventionally, there are some card images I've thought are cool enough to force into a deck regardless of whether I really should be using them. The one that comes to mind first is Above the Battlement, as I've actually grown quite fond of its text too and put it in most of my Sauron decks now. The red-and-black is perfect for a Sauron card.
I also want to throw out The Citadel of Minas Tirith. This was the favorite card of the guy who introduced me to the game. In his words: good title, good picture, good text, good lore.
Lastly, shout-out to the Radioactive Pig (https://wiki.lotrtcgpc.net/wiki/File:LOTR-EN01F295.0_card.jpg).

Back when only FotR was in theatres and I hadn't read the trilogy yet, I used to daydream about this card and what Minas Tirith was really like. I had it in my head that it was just some puny tower, not a city. It was so much fun to find out how wrong I was!
