I think the Mouth of Sauron was the last piece of the movies to make it into the card game. Was there anything left?

What do you mean? Characters? Locations? Weapons?
Firstly, I think the Eagles came after Mouth of Sauron in the sets, but I could be mistaken. I'm not really one for the post-Shadows sets (as everyone around here knows).
I know that Gúthwinë never made it into the card game. That was a big omission in my eyes.

Eagles appeared in Rise of Saruman. I think that set was the first time we got cards from the deleted scene in the ROTK movie where Merry and Pippin ransacked Isengard's storehouses.
Guthwine was the very first DC I ever wrote up because I was so disappointed it was never made.

Incorrect: There are several Fellowship cards from deleted scenes, including some (Border Defenses, Goblin Warrior, etc.) from scenes that still haven't appeared in any edition of the films.

I forgot about the eagles. Once we got them in RoS, did we have everything from the movies in card form (excluding, as already mentioned, Guthwine)?

Well, did we get seven Dwarves given rings? Sure we got Durin III, Linnar, and a few others, but I don't think we ended up with seven, did we?
On that note, we didn't get nine [Ringwraith] Rings, nor did we get seven [Dwarven] Rings.
We didn't get Beechbone, the Ent who was set on fire.

What about Aragorn's crown? Or Legolas's quiver? For that matter, they could have made "Gondorian helmet", "Gondorian breastplate", "Gondorian greaves", and "Gondorian paldrons". There's probably an infinite amount of things if you think hard enough (and are picky enough).
