If a companion is defender +1 and you assign 2 minions to it does the minions strength get added together like double stacking?

Yes, the strength of all minions in a skirmish is added together.

If the minions win the skirmish, add all damage bonuses on all minions in the skirmish and place 1+that number wounds on the companion/ally that lost the skirmish (for example: if Aragorn RotN loses a skirmish to an Uruk Soldier and an Uruk Fighter, he will get 3 wounds (losing a skirmish)+(Uruk Soldier damage+1)+(Uruk Fighter damage+1))

I'm curious, how could you have been playing it wrong when the rulebook gives almost this exact same specific example? (Aragorn vs two minions).

I never have actually fully read the rule books.  Mostly I had my brother teach me.  I guess I should read it then.
