Well... I think that if Gimli is your only companion, you probably will have a heck of a time winning any games. AFAIK the Dwarven culture has no burden removal, and with only one companion you can choose to add threats instead of burdens.
With that being said, with the Pippin Engine (Pippin HoSI + Home and Hearth x4 + Make Haste x4 + Daddy Twofoot x2 or x3) you can make a decent Solo Gimli deck. I can search around and try and find one for you if you were okay with using the Pippin Engine.

But then it wouldn’t be solo gimli. Are there any cards that discard minions before assigment? If so, that would be a possibility... |

No burden removal, no site path manipulation, no threat-adding as a way out... wow.
He can’t be allowed to skirmish (much), so I’m thinking a Slaked Thirsts type could be a starting point. In which case it’s essential to get Preparations out quickly, and to do that it’d be nice to have Something Slimy... maybe start Smeagol and Pippin HoSI, play the expensive stuff, and then scale back to solo Gimli?
1 Gimli, Bearer of Grudges
1 The One Ring, The Ring of Doom
1 Pippin, Hobbit of Some Intelligence (starting)
1 Smeagol, Poor Creature (starting)
1 Dwarven Armor
1 Dwarven Axe
1 Dwarven Bracers
1 Gimli’s Helm
4 Hand Axe
2 Ring of Fury
2 Ring of Guile
2 Preparations
2 Proud and Able
4 Baruk Khazad
4 Battle to the Last
4 Slaked Thirsts
1 Something Slimy
Good for the lulz. Preferably go second and play Dammed Gate-stream at site 2 to grab Something Slimy and then Preparations. Pippin and Smeagol can grant Gimli a temporary reprieve after flooding the pool.
Most of the other fellowship stuff costs . I think Proud and Able is too important to drop though because it boosts his resistance (just watch out for condition removal). Maybe replace Dwarven Axe with Gimli’s Battle Axe, but the additional could mean another minion.
Kill method is Slaked Thirsts in combination with Baruk Khazad or Hand Axe. |

My "Solo" Gimli isnt technically solo as it uses Gandalf leader of the company. I deal with burdens by using gilmis pipe gandalfs pipe and old toby. Plus crud loads of possessions with proud and able.
