i think both the legolas and gimli are cut from the epilogue where they showed what happened to the fellowship after the war of the ring

Yeah, Jackson was talking about doing that (I think they filmed some of it), but the story was mainly Frodo's, and it was getting to be too long.

How making him a companion? Add a burden to play a ring from your draw deck at no twilight cost. 16 str, 6 twilight, damage =2 and defender +1.

The second image is from the extended edition, probably the first image too but I'm not sure on that one.

The second image is definately from the extended edition. When Frodo looks into Galadriel's Mirror. Which is where I think the first image comes from aswell.
