Does returning a card into someone's hand (ex. Grima, WT or Speak No More to Me) counts as the FP 'takes a card into hand'?

I believe it should be right.

But anyway it can't count for the purpose of Verily I Come, as Grima and Speak No More To Me work at different phases than fellowship: "Each time the Free Peoples player draws a card (or takes a card into hand) during the fellowship phase..."
